Serves 4
Each serve has 2.2 protein 11 carbs (can be reduced if you use low carb tomato sauce and no cornflower ie have more of a runny sauce)
Ingredients
150g pork rind crackling (you know the chip type ones) mashed up to make crumbs
480g Pork, diced
1 egg
80g onion sliced thin
80g capsicum sliced thin
1 clove garlic diced fine
10 g ginger diced fine
150g cauliflower
Sunflower oil for frying
To make sauce:
1 tbsp Tomato sauce
1 tbsp low salt soy sauce
1 tbsp apple cider vinegar
1 tbsp sweet chilli sauce
1 tsp cornflower
1/3 cup water
Mix all ingredients together to make sauce.
Method
1. Whisk egg and dip diced pieces of pork into mixture.
2. Place egged pork into crumbs and coat evenly.
3. Fry in small amount of oil and set aside.
4. Meanwhile, place cauliflower in water and cook until soft. Drain water and mash with fork until cauliflower is in small pieces.
5. Add onion, capsicum, ginger and garlic to fry pan. Cook until tender.
6. Add sauce to pan and heat through.
7. Add pork to mixture and stir through.
8. Serve over a bed of the cauliflower.
